I used a new kind of bacon I found at the Polish for these. It is called gypsy bacon and it's about two inches wide. I heart gypsies.

Brisket too Early?

I thought it would be nice to have a smoked brisket for Good Friday, but I think the weather may have messed with the cooking time. It was ready in only four and a half hours. Made putting together the meal a little hectic...

I made a strawberry cake too (I ran out of icing, so I used whip cream to cover the rest.)...
